Rock Salt Prime Rib Roast Recipe

 

6-8 lbs. Prime Rib Roast, bone in
5 lbs. Rock Salt
1 tsp. Garlic, minced
½ tsp. Salt
½ tsp. Coarse Ground Black Pepper

DIRECTIONS
Oven temp: 350°
Cooking time: 25 to 30 minutes per pound
Pan Type: Roaster

Preheat oven, Open rock salt and lay in bottom of pan. Place meat rib side down on the rock salt. The ribs take the place of roasting rack. Rub the minced garlic on the meat. Sprinkle with salt and pepper. Place a meat thermometer in the middle. Bake for the allotted time or until meat reaches 130°.
Remove from over, cover and let set for 20-30 minutes.
Discard salt. Crack any salt off of roast before you slice it. Using a sharp carving knife, slice meat across the grain for serving.
