Roast (4 - 5 lbs.), rolled and tied |

Directions:
In a small bowl, combine mustard, salt, paprika,
allspice and pepper; set aside. Using a sharp knife, cut long
deep slits in the top of the roast, approximately 1 inch apart.
Stuff each slit with onion, garlic, parsley and a small amount
of the spice mixture. Rub remaining spice mixture on the outside
of the roast. Place on a rack in a deep roasting pan. Bake,
uncovered, at 350° for 2 to 2-1/2 hours or until meat
thermometer reads 160° Yield: 8-10 servings |
