Grilled Zucchini

 

¼ cup Balsamic Vinegar
¼ cup Olive Oil
1 tablespoon Chopped Parsley
¼ teaspoon Granulated Sugar
2 medium Zucchini (about 1/2 lb. each)
Pepper to taste

Directions:
   Slice off stems and 1/4 inch from bottoms. Cut each into lengthwise pieces desired thickness. Place in a glass dish. Combine vinegar, oil, parsley, sugar and pepper. Mix well and pour over Zucchini. Marinate at room temperature for at least 1 hour, 3 or 4 hours is fine, turning once or twice. Place zucchini directly on grill, 3 or 4 inches over medium hot coals; cook about 40-45 minutes, brushing with marinade and turning once. Remove to tray and enjoy.
